Fish-pie

Method: Bake, steam or microwave the fish but don’t overcook. Season well. Boil the potatoes until well done and mash with a little water to make  a soft consistency, Season well. Place fish in oven proof dish, Flake the flesh, remove the skin, and distribute the fish evenly across the base of the dish. Sprinkle the grated cheese. Cover the fish completely with the mashed potatoes and smooth over with a fork. Sprinkle a little cheese on the top if desired. If the ingredients are still hot just place under a hot grill for a few minutes to brown the top. Alternatively, the pie can made well in advance and then warmed through in pre-heated moderate oven for 20 minutes, or microwaved on high for 5 minutes

Ingredients: (served for 4)

600g cod fillets

600g potatoes, peeled

salt and pepper

50g Cheddar cheese
