Microwave the jacket potato until cooked.
Meanwhile make the filling. Fry the onion in saucepan until softened, add the diced tomato and the curry paste and cook for a minute. Add the beans and heat through. Cut a cross in the top of the potato and fill with the bean mixture.
Serve with a large mixed salad.

1 baking potato
½ small onion
Small tin baked beans
1 tomato, diced
1tsp mild curry paste
