Salad dressing s are very personal things, so it is not easy to give precis amounts for the various ingredients. Play around with the following method until you produce something that suits for your taste.
Method: Mix all the ingredients together in a jam jar and share well until you have an evenly blended dressing. try adding half a clove of crushed garlic, or teaspoon of mild mustard, or a tablespoon of tahini (sesame paste) or even all three to the above. The trick with salad dressing is not to overdo the sour (vinegar or lemon) taste. If using lemon juice, it is vital to use a lemon that is as ripe as possible. It is best to start by adding only some of the vinegar or lemon, and then slowly add more until you feel that you have a dressing you really like.
Ingredients: 1/2 jam jar good olive oil or safflower oil, 2 tablespoon walnut oil, 2 tablespoon wine vinegar or cider vinegar or lemon juice, 2 tablespoon maple syrup,1 tablespoon fresh or dried herbs (any of them but basil and oregano are particularly good), twist freshly ground black pepper, dash soya sauce.
